Chicken Chili

2 tablespoons olive oil
1 medium onion, chopped
2 cans chicken broth
2 cans Great Northern Beans, drained
1 can diced green chilies
2 to 3 cups shredded roasted chicken (vary amount according to preference)
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste

Saute onions in oil until soft. Add broth, beans, chilies, and chicken. Season according to taste. Bring to boil. Turn down heat and simmer about 10 minutes. Top with sour cream, cheese, Fritos, and green onions.


  1. This recipe sounds delicious and, if the ingredients are shopped for in advance, an easy dish to make any night. I'd consider serving it with shredded cheese on top and Mom's Angel Biscuits (instead of the Fritos).
